Tomorrow is Valentine’s Day and maybe you forgot to pick up a box of chocolates or perhaps you just want to make your sweetie or friends something delicious to celebrate. We have the perfect recipe for you: vegan truffles! These tasty treats will make a great and unique Valentine’s as well as just because. We have put together a basic recipe for the truffles, but adding different flavorings and toppings will really personalize these romantic chocolates.

Vegan Romantic Truffles

  • 1 8oz Container of Vegan Cream Cheese (we recommend Follow Your Heart)
  • 2 Cups Organic Powdered Sugar
  • 2 Cups Vegan Chocolate Chips
Flavor Ideas
  • Vanilla Bean Extract
  • Hazelnut Extract
  • Raspberry Flavoring
  • Peanut Butter
  • Almond Flavoring
  • Cayenne Pepper
  • Peppermint

Possible Toppings

  • Coconut Shavings
  • Cocoa Powder
  • Crushed nuts (almonds, peanuts etc)
  • Powdered Sugar
  • Salt
  • Cinnamon
  • Crushed Mint Candy

In a mixing bowl, whip the vegan cream cheese and powdered sugar and set aside. In a double boiler, stovetop or microwave melt the chocolate chips until smooth. Add the chocolate chips to the cream cheese mixture and blend until smooth. You may want to add more chocolate depending on your preference. If you are making a multitude of flavors, you should set aside different amounts in smaller bowls. Add in the desired flavor such as raspberry, peanut butter, or cayenne pepper. Mix the flavoring in and refrigerate for one hour. If you are making basic chocolate truffles, refrigerate for one hour right after mixing in the melted chocolate.

Once refrigerated, roll into small balls. For simple truffles roll in either cocoa powder or powdered sugar and set aside. For more exciting toppings, such as crushed nuts, candies, salt, or cinnamon also roll and set aside. We think this recipe works best with a number of different flavors or toppings. That way you can make your own unique box of vegan chocolates!

My birthday is in December and to my delight one of my good friends, Andrea, made me amazing homemade vegan peanut butter cups and mailed them from NY to CA. After opening my package, I was amazed to sink my teeth into these delightful desserts and had to share them with my friends. After I devoured my treats, I soon craved more. I wrote Andrea asking for the recipe and to my delight, she quickly emailed the recipe. As it turns out, she got the recipe from Alicia Silverstone, who just wrote the vegan book the Kind Diet. Since, she sent me the recipe, I had to try it myself and pass it on to my lovely blog readers. Trust us, this easy and fun recipe is worth the two-hour wait! They also make a nice present, especially with Valentine’s Day fast approaching.

Vegan Peanut Butter Cups 

Prep Time: 15-20 minutes    Cool Time: 2.5 hours

1 Cup Vegan Chocolate Chips

3/4 Cup Organic Crunch Peanut Butter

3/4 Cup Graham Cracker Crumbles

1/2 Cup Organic Earth Balance

1/4 Cup Organic Evaporated Cane Juice or other sweetener

1/4 Cup Soy Milk

1/4 Cup Organic Chopped Peanuts

In a small muffin tin, line the muffin circles with preferably recycled or eco-friendly muffin liners and set aside. Melt the Earth Balance in a small saucepan and stir in the peanut butter, graham crackers, and evaporated cane juice. Remove from heat and with a spoon, put the peanut butter mixture into the liners at about halfway or 2 tbsp per cup. In another sauce pan, heat up the soy milk and add in the chocolate chips. Stir until the chocolate is melted. Pour the chocolate over the peanut butter in the lining until they are filled. Sprinkle the peanuts on top. Place the tray in the fridge for 2.5 hours and serve or wrap as a gift!

Organic & Fair Trade Chocolate Martini Recipe:

2 oz Eco-Friendly Double Chocolate Vodka
1 oz Homemade Fair Trade and Organic Creme de Cocoa
Fair Trade/Organic Chocolate Shavings

Homemade Fair Trade and Organic Creme de Cocoa Recipe:
Makes enough for 4 drinks

2 oz Organic Vodka
1 tsp Organic/Fair Trade Cocoa
1/4 Cup Organic Corn Syrup

Before mixing the martinis, in a shaker combine the ingredients for Homemade Creme de Cocoa. We couldn’t find organic Creme de Cocoa already made so we concocted our own, it is pretty simple, however if you want to cheat you can purchase conventional Creme de Cocoa. Once you have all ingredients shake them up for a few minutes and set aside.

Pour 2 oz of Double Chocolate Vodka and 1 oz of the Creme de Cocoa you just made, over a handful of ice in a cocktail shaker.  Shake until very cold, then strain into a chilled martini glass.  Garnish with chocolate shavings. Serve with Red Velvet Cake listed below.

Organic Vodka: There are a few brands out there for plain organic vodka such as Square One Vodka, Rain Organic Vodka, and Tru Organic Vodka to name a few. You can also use the plain 360 Eco-friendly Vodka.

Organic/Fair Trade Cocoa: While there are plenty of Organic Cocoa Powders out on the market, there are a couple of companies that provide both Organic and Fair Trade Cocoa Powder such as Equal Exchange and Green & Black’s.

Organic/Fair Trade Corn Syrup: The only organic corn syrup currently on the market is made by Wholesome Sweeteners, it also happens to be Fair Trade certified. If you can not find this, you can substitute with another liquid sweetener such as organic agave.

Fair Trade/Organic Chocolate: You are in luck with this one! There are plenty of Fair Trade and Organic Chocolates out there including Equal Exchange, Theo,  and Green & Black’s to name a few.

Vegan & Fair Trade Red Velvet Cake:

2.5 Cups Organic Flour
2 Cups Evaporated Cane Juice or other sweetener
1/4 Cup Fair Trade Cocoa Powder
1 tsp Organic Baking Powder
1 tsp Organic Baking Soda
1 tsp salt
1.5 Cups Organic Vanilla Soymilk
2 tsps White Vinegar
1/2 Cup Organic Canola Oil
2.5 Tbls Soy Yogurt
2oz Vegan All Natural Red Food Coloring
3 tsps Organic Fair Trade Vanilla

Vegan Chocolate Creme Cheese Frosting:
1 Cup Organic Earth Balance or other vegan margarine
1 Cup Follow Your Heart Creme Cheese or other vegan creme cheese
1/8-1/4 Cup Fair Trade Cocoa Powder (see above)
2 Tsp Organic Fair Trade Vanilla

Preheat oven to 350 degrees. Use 2 9″ pans and grease lightly with Earth Balance or use non stick pans. In a mixing bowl combine the soy milk and vinegar and let it stand for 5 minutes. This should curdle a little. While this is settling, in an other bowl sift together the Flour, Cane Juice, Baking Powder, Baking Soda, and Salt. After the soy milk and vinegar curdles, add in the Canola Oil, Soy Yogurt, Food Coloring, and Vanilla stir until combined. While mixing constantly add the wet ingredients to the dry ingredients and mix until no lumps occur. Pour the batter into the two 9″ pans and bake for 30-35 minutes.

While the cake is baking, mix in a large bowl softened Earth Balance, Creme Cheese, Cocoa Powder, and Vanilla. Stir until fully mixed and refrigerate until cake is cooled off. Frost the first layer, add the next layer, and frost the top. Garnish with shavings from a Fair Trade Chocolate bar or berries (think red: strawberries or raspberries). Serve with Organic Wine, Organic Champagne with Stawberries, or the Chocolate Martinis listed above.
